We are delighted to welcome to Dartmoor Brewery, Ian Cobham, who'll join our brewing team and work alongside Head Brewer Mike to produce our great tasting beers. Ian is in the final stages of completing his Advanced Beer Sommelier qualification and brings a different set of skills to the brewery from his background in the wine industry. Formerly a wine sommelier for a hotel group, Ian also spent time making wines in Burgundy, the south of France and Bordeaux. He hasn't looked back since swapping grapes for hops and joining the beer industry – and we don't blame him!
“There are similarities between wine and beer production,” comments Ian, “in that they are both very complex processes that require top quality ingredients to produce outstanding products. The advantage and exciting part about beer, however, is that the basic ingredients, water, malt, hops and yeast, can be varied everyday whereas in wine it can only happen but once a year. Thus there is the freedom to experiment and create exciting beers at will.”
Ian and Mike are already discussing ideas for interesting and new flavours for seasonal and speciality beers and there are plans to develop beer and food matching ideas…so watch this space for new and tasty developments!
